At Anaga The Restaurant, we have created a new style: a "Japanese-Western Fusion Course" that blends the techniques and sensibilities of both Japanese and Western cuisine. Prioritizing seasonal ingredients above all else, we offer a unique seasonal story that reflects the bounty of Awaji Island and the Seto Inland Sea in each dish.

This plan, the fourth chapter following spring, summer, and autumn, features the "Awaji Island 3-Year-Old Tiger Pufferfish," a winter gift nurtured by the seas of Awaji Island—a fish said to be "three times more delicious after three years of cultivation." We have brought out its rich flavor in each dish. Please enjoy the story of the pufferfish with all your senses, from sashimi and fried pufferfish to simmered head, meunière, and risotto.
